In a large pan, heat the olive oil over a medium heat.
Add beef, and cook until browned.
Add in the taco seasoning, and mix for one minute, until all the mince is coloured.
Stir in beans, corn, rice, tomatoes/passata and chicken stock.
Bring to the boil, then cover and reduce heat to low.
Cook for 20 minutes (or until the rice is cooked), stirring occasionally.
When it's ready, serve in bowls, adding any toppings you may want.
